Pastillas de Ube Recipe
Materials Needed:
  • 1pack Colored Paper“Papel de Hapon”, for wrapping or use paper liners & clear cellophane.
  1. Clean, peel and slice the ube then put it in a large casserole with enough water to cover the ube.
  2. Boil ube over medium heat until tender and strain, cool down before mashing.
  3. In a non-stick pan, combine ube and sweetened condensed milk and mix well.
  4. Cook over low heat and stir constantly to avoid mixture from burning.
  5. Constantly mix the ube until thick and smooth. “When your ube mixture doesn’t stick to the pan and starts to form soft dough it’s done and remove it directly from the fire.
  6. Transfer the ube pastillas in a greased pan and flatten the entire mixture using a greased spatula or any similar utensil.
  7. Set aside and let it cool down completely before cutting into small bite-size pieces.
  8. Slice ube pastillas according to your size preference using a greased knife.
  9. Roll Ube pastillas lightly with sugar and shake off the extras.
  10. Repeat procedure until done then set aside.
  11. You can now wrap on prepared pastillas wrappers.

Recipe Notes

You can used powdered ube for easy and convenient cooking.

Always used non-stick pan to avoid burning and sticking.

Store in an airtight container at room temperature.

For a sweeter and smoother version use ube halaya and add 1 cup powdered milk for extra creaminess.
