Caprese Salad

I think one of the prettiest salads you can have is the Caprese Salad.  It’s vibrant colors are so inviting, promising something creamy, fresh and delicious.

What you may ask is a Caprese Salad.  It’s an Italian salad of fresh mozzarella cheese, tomatoes, and basil with a light vinaigrette dressing.  It’s said that Caprese Salad was originally made to honor the Italian flag which is Red, White, and Green; the same colors of the salad.

Caprese Salad is definitely a family favorite.  It’s not only delicious but it’s so easy to make.  We have it for lunch, as a panino or sandwich.  You can place the ingredients between 2 slices of bread or better yet a ciabatta roll, grill it just until the bread is toasted and the cheese melts, and you have a wonderfully simple meal!

The most important thing to remember when making Caprese Salad at home is to use the freshest ingredients you can find.  This mean unless absolutely necessary the prepacked balls of mozzarella in the supermarket’s dairy case just won’t do!

Short of bringing home fresh mozzarella from Italy (which I’ve actually done) I usually find fresh mozzarella at Costco or the deli counter.  It’s the balls of cheese that’s usually floating in the tub it’s packaged in.  You’ll know it’s fresh because it’s softer than those hard balls packed in plastic wrap.

Tomatoes of course are fresh, pick nice ripe ones.  I get mine from my garden along with the fresh basil.  If you don’t have a basil plant (and you should! it’s so easy to keep even a small one in the kitchen window) you can buy fresh basil leaves at the grocery store.

Once you have all the fresh ingredients all  you really need is some extra virgin olive oil, balsamic vinegar, and a bit of Italian seasoning if  you have it, and some salt.  If you don’t have Italian seasoning you can use dried oregano, parsley, or basil or you can just use black pepper.

Caprese Salad is great for a light lunch or as a fresh addition to any meal.  It’s tasty and refreshing, the perfect summer salad!

Caprese Salad

Ingredients:

5-6 slices of Fresh Mozzarella Cheese (slices should be about 1/2″ thick)

1 Firm Ripe Tomato – sliced in about 1/2″ thick rounds

3-6 Fresh Basil Leaves

1/4 Cup Extra Virgin Olive Oil

1/4 Cup Balsamic Vinegar

1 Tsp. Italian Dressing

Salt & Pepper to taste

Directions:

Slice mozzarella and tomatoes into 1/2″ rounds and arrange on a plate.  Alternate tomato and cheese to make it look nice.

You can also add a basil leaf between the cheese and tomato or you can place the leaves in the center.  Place the three ingredients on the plate any way you find pleasing.

Mix together oil and vinegar.

Add 1/2 Tsp. of Italian seasoning to the oil mixture and stir well.

Drizzle over the fresh ingredients just before serving.

Sprinkle remaining Italian Seasoning over all and season with salt and pepper if desired.

Mushroom & Cheese Stuffed Chicken Breasts In Creamy Sauce

stuffed chicken breastsAre you searching for that perfect dish to impress your guests with this summer?  I know you want something that looks impressive but is fairly simple to make.  You just want them to think you spent hours slaving away  in the kitchen; but you really just want to pop something in the oven while you snuggle up to a good book.  Well I’ve go the perfect dish for you!  °

Well perhaps super easy is a bit of a stretch.  You do have to put some effort into making stuffed chicken breasts, but not a whole lot, really I mean it.  You probably have most of the ingredients in your kitchen already.  With just a little bit of prep time (before popping everything in the oven) and a few minutes to make the sauce you will have time to sit down and read a book or take a short nap while it’s cooking.

You can serve this dish with a side of pasta for a very satisfying meal.  Add a tossed salad and you’ve got a great meal to serve to friends and family!  Seriously your main ingredients are garlic, mushrooms, cheese, and chicken what’s not to love?

Ingredients
Stuffed Chicken Breast
Creamy Sauce

Instructions
  1. Preheat oven to 400 degree F
  2. Melt Butter in oven safe skillet
  3. Add garlic and saute about a minute. Add sliced mushrooms, parsley, salt and pepper. Saute until mushrooms are soft.
  4. Set mushrooms aside and allow to cool while you prep chicken breasts
  5. Wash breasts and pat dry with paper towel
  6. Rub onion powder, salt, and pepper on each breast
  7. Horizontally slice each breast at its thickest part. Do not slice through. Leave it attached to form a pocket.
  8. Place 2 slices of mozzarella cheese in each pocket
  9. Fill each breast with the sauted mushrooms and seal each breast with a couple of toothpicks.
  10. Remove any extra mushrooms from the pan. Leave any juices in the pan.
  11. Heat this pan and the juices and add the stuffed chicken breasts.
  12. Sear both sides of the breasts until they are golden brown.
  13. Cover pan and place in preheated oven for 20 minutes or until chicken is cooked through
  14. Remove from oven and place chicken breasts on a serving dish to keep warm while you make the sauce
Creamy Sauce
  1. Heat pan with chicken juices on stove
  2. Saute the garlic until fragrant
  3. Add Half & Half
  4. Bring to a simmer and add grated parmesan cheese and any remaining mushrooms
  5. Simmer until cheese has melted
  6. Slowly stir in dissolved corn starch to thicken
  7. Salt and pepper to taste
  8. Add parsley
  9. Either add chicken back into this pan or pour sauce over chicken to serve
  10. Serve with a side of your choice of pasta

Crispy Chicken Caprese

Chicken CapreseCrispy fried chicken, mozzarella cheese, and garlic what more can you want?  There are many different Chicken Caprese recipes out there but none of them are like my recipe.  Most Chicken Caprese recipes aren’t crispy.  I like crispy chicken and I also love mozzarella cheese so I figured I’d combine them to make this Crispy Chicken Caprese.

This Chicken Caprese is crispy fried chicken in a flavorful tomato basil sauce and topped with melted mozzarella.  Totally yummy!  The key to a delicious Caprese is the FRESH ingredients.  Don’t be tempted to substitute dried basil!  I serve it with a green salad and fresh baked bread.  My husband loves it!

Crispy Chicken Caprese

Serves 2

Ingredients:

8-10 Pieces Chicken Tenderloins

1 Cup all purpose flour

3 Tbsp.  Garlic, finely minced

1/4 Cup Freshly Parmesan Cheese, finely grated

1 pinch Sea Salt

1 pinch Ground Black Pepper

1/2 cup Olive Oil

8 oz. Grape Tomatoes, cut in halves

1/4 Cup Fresh Basil, torn into pieces

1 Ball Fresh Mozzarella Cheese, Sliced

Directions:

Wash chicken tenderloins and pat dry with a paper towel.

Combine flour, 1 tbsp. garlic, parmesan, salt, and pepper in a bowl and mix well.

Heat Olive Oil in frying pay over medium high – medium heat.

Coat tenderloins with flour mixture and drop into hot oil.

Fry until both sides are golden brown, about 5-6 minutes.

Remove from pan and drain on paper towel.  Set aside.

Add remaining garlic to oil you just friend chicken in.  Stir constantly until it starts to brown.

Add tomatoes and cook until juices start coming out of the tomatoes and the tomatoes are soft.

Add Basil and cook until basil starts to wilt.

Add in fried chicken and arrange in a single layer in the pan.

Top with sliced mozzarella, turn off heat.

Cover pan until cheese melts.

Serve right away.
