Grilled Chicken with Chimichurri

The secret to this perfectly juicy grilled chicken recipe from chef Anthony Endy of The Alisal Guest Ranch and Resort is twofold: One, let the chicken sit in the aromatic citrus-and-herb flavored brine for 24 hours, and two, once your coals are hot, keep it moving on the grill. After the initial sear, turn the chicken often, and grill until a probe thermometer inserted in the thickest portion registers 155°F. Try serving it with Santa Maria–Style Pinquito Beans and a Mild Tomato Salsa on the side.

Ingredients

CHICKEN

8 cups water
2 (5-ounce) oranges, quartered
2 (2-ounce) lemons, quartered
2 (1/4-ounce) chiles de árbol, cracked open
1 bunch fresh flat-leaf parsley
10 thyme sprigs
8 bay leaves
4 rosemary sprigs
4 medium garlic cloves, smashed
2 tablespoons kosher salt
1 tablespoon black peppercorns
2 (4-pound) whole chickens, split, backbones and wings removed and discarded or reserved for another use

CHIMICHURRI

1 cup extra-virgin olive oil
1 bunch fresh cilantro, stems removed and discarded
1/2 bunch fresh flat-leaf parsley, stems removed and discarded
3 tablespoons minced garlic
3 tablespoons fresh lemon juice (from 2 lemons)
3 tablespoons finely chopped shallot (from 1 medium shallot)
2 1/4 teaspoons fresh oregano leaves
1 1/2 teaspoon kosher salt
1 1/2 teaspoons balsamic vinegar
1 teaspoon crushed chile de árbol or other dried red chile flakes

SPICE BLEND

5 teaspoons paprika
4 teaspoons kosher salt
1 tablespoon ancho chile powder
2 teaspoons dried Mexican oregano
1 teaspoon chipotle chile powder

Directions

Make the chicken

Step 1
Combine 8 cups water, oranges, lemons, chiles, parsley, thyme, bay leaves, rosemary, garlic, salt, and peppercorns in a large stockpot. Bring to a boil over high. Cook, whisking occasionally, until salt dissolves and herbs are aromatic, about 2 minutes. Remove from heat; let cool completely, about 1 hour. Place chicken halves in mixture in stockpot. (Chicken should be fully submerged in liquid.) Cover and refrigerate 24 hours.

Step 2
Process all chimichurri ingredients in a blender or food processor until smooth, about 1 minute, stopping to scrape down sides as needed. Store in refrigerator in an airtight container until ready to use, up to 8 hours.

Make the spice blend

Step 4
Stir together all spice blend ingredients in a small bowl until combined. Set aside.

Step 5
Open bottom vent of a charcoal grill completely. Light 2 charcoal chimney starters filled with hardwood lump charcoal. When coals are hot, pour them evenly onto the 2 outer sides of grill, leaving center of grill unlit. Top each side of coals with an oak wood chunk. Adjust vents as needed to maintain an internal temperature of 300°F to 350°F. Coat top grate with oil; place on grill. (If using a gas grill, preheat to medium-low [300°F to 350°F] on outer burners, leaving middle burner[s] unlit.) Remove chicken from brine; discard brine, and pat chicken dry.

Step 6
Place chicken, skin side up, on oiled grates over center portion of grill without coals (or unlit center portion of gas grill). Grill, uncovered, until a thermometer inserted in thickest portion of breasts registers 110°F, about 15 minutes, rotating chicken every 2 to 3 minutes to avoid burning. Flip chicken on grates; grill until skin is slightly caramelized and browned, about 3 minutes. Cover and grill until a thermometer inserted in thickest portion of breasts registers 150°F, about 25 minutes, flipping and rotating chicken every 5 minutes.

Step 7
Sprinkle chicken all over with 2 tablespoons spice blend. Place chicken, skin side up, on grates. Grill, uncovered, until a thermometer inserted in thickest portion of breasts registers 155°F, 40 to 45 minutes. Remove chicken from grill, and cover loosely with aluminum foil. Let rest 15 minutes. Carve chicken. Sprinkle with additional spice blend to taste. Serve with chimichurri.

If you’re looking for a delicious warm cocktail, this Mulled Wine recipe is an easy and delicious recipe for the fall and holiday season.

It snowed here last week. Can you believe it!?! (Bring on my Mulled Wine recipe!!) Nothing stuck around for long, but in my book, mid-October is too early for the white stuff. Not being a huge fan of winter, I was not happy to see those fluffy flakes.

Our snow event, however, has a silver lining (actually two). It’s said that if snow falls before the first frost, we will have an “easy winter. “*crosses fingers* Secondly, snow gives me an excuse to stay inside, watch SVU marathons, and whip up something delicious in the kitchen.

That might be the only way I can tolerate winter: Olivia Benson and something yummy on the stove or in the oven.

So to kick off this cozy season, today I’m sharing a recipe for Mulled Wine. I can’t believe that in seven years of blogging, this is my first post about how to make Mulled Wine. What’s wrong with me!?!

 

Earlier this week I was watching Matt Bellassai’s Whine About It. (Side note: If you haven’t watched this web series, do yourself a favor and go back and check out the first season. I should mention that there is some foul language and off color humor in case that might offend you.) In this episode I watched, Matt was sipping on mulled wine, and immediately I knew I had to whip up a batch.

HOW DO YOU MAKE MULLED WINE?
It’s really very simple. Everything get’s tossed into a pot and set to simmer.

Once it’s warm, it’s ready to serve! It really is that easy.

There’s something wonderful about warm spiced wine. The combination of the smell, warmth, and flavor is magical and a must-have for cool fall or winter evenings. It’s also the perfect beverage for entertaining. Throw everything in a crock pot, set it on low, and you’re done. Plus, it makes your home smell fabulous. Love that!

WHAT WINE IS BEST FOR MULLED WINE?
Pinot Noir is kind of my go-to for everything. However something like New World Merlot or Shiraz would work quite nicely too. Any Italian red would be delightful too!

I always recommend a wine you like to drink. If necessary invite a lot of friends and family over and keep making batch after batch of mulled wine until you find just the right one.

WHAT GOES INTO MULLED WINE?:
For the recipe below, I used the following ingredients to make my mulled wine.

red wine
apple cider
brandy
honey
cinnamon sticks
oranges
cloves
peppercorns
The recipe below makes a double batch, which is perfect for a crockpot or larger pot. However, feel free to cut this recipe in half. I just heated up mine on the stove in my Straub Cocotte which makes a beautiful presentation.

Also instead of adding in the spices loose, you can use Mulling Spices. I have a recipe for how to make them at home HERE.

Keep in mind that you want the mixture to warm up and only simmer. Try not to boil it as you’ll end up cooking off some of the alcohol. What’s the fun in the that?

For the wine, I combined one sweeter red (a locally made wine) and a dry wine (I like Pinot Noir or Shiraz.). Use wine you like to drink and pick a sweetness level that works for you.

Okay, now let’s whip up a batch.

It’s really that simple. To a make this even easier, place the cloves and peppercorns in a tea ball or cheesecloth so you don’t have to hunt for them once the simmering is complete.

INGREDIENTS
2 bottles red wine – I like to use one sweet red and one dry red.
4 cups apple cider
1/2 cup brandy
1/4 cup honey
4 cinnamon sticks
2 oranges – sliced
8 whole cloves
12 black peppercorns
Additional cinnamon sticks and orange slices for garnish
INSTRUCTIONS
Combine the cider, wine, brandy, honey, cinnamon sticks, orange slices, cloves, and peppercorns in a large pot.
Simmer over low heat for 10-15 minutes or until thoroughly heated.
Remove cloves and peppercorns. Serve in heatproof glasses or mugs. Garnish with a cinnamon stick and / or orange slice.

Ingredients

 

  • 1½ kg/3lb 5 oz marrow, peeled and deseeded
  • 225g shallot, sliced
  • 225g apple, peeled, cored and sliced
  • 225g sultana

 

 

  • 2cm piece ginger, finely chopped
  • 225g demerara sugar
  • 850ml malt vinegar
  • 12 black peppercorns

Method

1. Cut the marrow into small pieces, put in a bowl and sprinkle liberally with 2 tbsp salt. Cover and leave for 12 hrs.

2. Rinse and drain the marrow, then place in a preserving pan or large saucepan with the shallots, apples, sultanas, ginger, sugar and vinegar. Tie the peppercorns in muslin (or put into a small enclosed tea strainer) and place in the pan. Bring to the boil, then reduce the heat and simmer, stirring from time to time, until the consistency is thick.

3. Leave to settle for 10 mins, then spoon into sterilised jars (see tip below), put on the lids and label. Will keep for a year in a cool, dark place.
