In the Philippines we have a celebration called “FIESTA”, FEAST in English.
Every Municipality and Barangay has their own Fiesta, every Municipality and Barangay has their own Saint to Represent, for example, our Barangay represents the famous St. Isidore the Farmer. We call it our “PATRON” St. Isidore.
Every year in our Barangay, we have 2 days to celebrate, 1st day, we call it Dusperaz and the second day is the Fiesta, I don’t know why it’s 2 days, you’re wondering why? Me too! Anyway a Filipino Traditional Fiesta is awesome; yes it really is, because everyone literately is invited, everyone can visit houses to celebrate the Fiesta. All are welcome to eat, drink, and even can take food home. Filipinos call it “Bring House” because visitors can bring food home.
When Dusperaz arrives, the kitchen is already awake and starting to cook mouth-watering dishes and these dishes are:
This Paksiw na Pata is a mouth-watering Fiesta/Party Dish that every Filipino loves. I love this dish because it has a little bit sweet taste and very tender when cooked properly, my dogs love it too.
I also love this dish because it’s also sweet and a little bit of sourness that makes this dish fantastic, it has a great texture and it could be a star dish if cooked properly.
I also love this dish cause it has a lot of things going on in your mouth with each bite, it’s soft, a kick of sweetness and a taste of earthliness because of the raisins. Perfect!

I love beef, and I’m sure you do. This is one of my favourite Fiesta dishes; i can’t explain the heaven I experienced every time I ate this dish, its heaven.

Alright, this is the love of my life, this dish for me is heavenly heaven, when we celebrate Fiesta in my Mom’s home, I will never ever forget to tell my mother to cook Lechon Kawali, crunchy skin outside, tender and juicy inside. Perfect!

This is the best actor and the star of the day. Fiesta will never be a fiesta without this Fiesta star dish. Crispy skin in the outside, juicy, flavorful and tender in the inside. HEAVEN!!!
Lechon Paksiw Recipe!!!
Actually this dish cooked right after fiesta because the ingredients you use for this is the Lechon Baboy left overs, we always do this dish after celebrating Fiesta. We cooked again all the left over food as well as the Lechon Paksiw and go to a beach and dive. None stop party and get drunk! Cool…
