Chicken Long Rice – Hawaiian Chicken Noodle Soup
Bone in with skin
Fresh ginger root
sliced into slivers
Clear Bean Thread Noodles
Place thighs in large pot and add enough water to almost cover chicken.
Add chicken broth and ginger. Make sure liquids fully cover the chicken.
Bring to a boil, then reduce heat to simmer.
Cook for about 45-60 minutes or until chicken starts to fall off the bone.
Debone Chicken, remove skin, and return to pot.
Stir in salt and soy sauce to taste.
Add noodles and cook until noodles are soft.
Top with chopped green onions.
