Simple Tomato Salad

Several years ago while planning my son’s wedding Sheena, his bride, my daughter Jaime, and I found ourselves wandering the aisles of our local craft store that specialized in wedding decor.  As we wandered the aisles we oohed and aahed over the supplies picking out what we liked and wondering how we could use them to make centerpieces for the reception.  Unbeknownst to us our crazy conversation was overheard by one of the floral designers.  He approached us ready to give advice.  He pointed out that we needed to consider not only the cost but the time it would take to put together the elaborate centerpieces we were imagining.  When he found out we needed over 20 centerpieces he told us it would take forever and cost a small fortune if we included all the supplies he heard us mention.  I mean we wanted ribbons, marbles, ferns, fresh flowers, in short all the bells and whistles.  The best advice we got that day was KISS – Keep It Simple Stupid!

So what does this have to do with food?  A lot!  These days we’re bombarded with new culinary trends daily.  That new sauce, new kitchen gadgets, exotic ingredients, and more; all of course designed to somehow make our lives better or easier, and our taste buds tingle.  Well all that is all good and well, but sometimes we yearn for something simple and basic.  And what can be more simple than a tomato salad?

This tomato salad is a no brainer.  It requires 2 ingredients, 3 if you count the garnish.  You don’t need fancy gadgets or fussy dressings.  It’s simple, fresh, healthy, and absolutely delicious!  Tomato Salad is perfect for those vine ripened summer tomatoes and those greenhouse tomatoes we find in the winter.

It’s a great starter with any meal or as a light lunch.  Did I mention it takes less than 5 minutes to throw together?  Perfect!

Ingredients:

2 Ripe Tomatoes  make sure they’re ripe but firm.  You don’t want mushy overripe ones.

Blue Cheese Dressing and/or crumbled blue cheese

Fresh Parsley finely minced

Directions:

Wash tomatoes and pat dry with a paper towel

Slice tomatoes into rounds crosswise

Arrange slices on to serving plate

Pour blue cheese dressing over tomato slices and/or crumble blue cheese over them

Sprinkle parsley over the blue cheese

Serve chilled

You can make this in advance and store in the fridge until ready to serve

  3. Arrange slices on to serving plate
  4. Pour blue cheese dressing over tomato slices and/or crumble blue cheese over them
  5. Sprinkle parsley over the blue cheese
  6. Serve chilled

Homemade Salsa

homemade salsaSalsa is probably my most favorite condiment.  There’s so much you can do with it.  You can use it as a dip with fresh tortilla chips, a sauce for just about any kind of meat or veggie, a topping for tacos, burritos, and more!  You can even use it in homemade breakfast burrito.  But I’m not too crazy about the bottled salsa found in grocery stores, that’s why I make my own homemade salsa.

It’s pretty simple to make, you can make it as hot or mild as you like.  I like mine super hot! Homemade Salsa is made with fresh ingredients, but since it has no preservatives it doesn’t keep long, just a day or two at most.  But that’s not a problem at our house.  We love my homemade salsa so much that there’s almost never any leftovers! I love it just rolled in a fresh tortilla!

Ingredients:

3 Large Ripe Tomatoes

1 Large Onion

1 Bulb Garlic

3 Large Jalapeno Pepper (you can adjust this to taste)

1 Bunch Fresh Cilantro

1 Lime

Salt & Pepper to taste

Olive Oil (use only if you will broil instead of grill veggies)

Directions:

Wash Tomatoes, Peppers, Cilantro, and Lime well

Leave onion and garlic peel on

Grill everything except the Cilantro and Lime until it’s well cooked*

*If you don’t want to grill you can drizzle the veggies with about 1 tablespoon of olive oil then broil in the oven about 30 minutes

Dice Tomatoes and Peppers (for spicier salsa leave seeds in, for mild salsa remove seeds)

Peel onion and dice

Slip garlic cloves out of peel and grind or mash

Chop Cilantro

Add all ingredients together and combine well

Squeeze juice of lime, add salt and pepper.  Stir well.

Serve with chips or use for toppings.

Bruschetta Filipino Style – Fresh!

Bruschetta

 

Bruschetta pronounced  (bruˈsketta) is traditionally an antipasto, appetizer,  from Italy.  Bruschetta is  grilled bread rubbed with garlic and topped with olive oil and salt to taste.  You may include toppings of basil, tomato, beans, vegetables, cheese or cured meat.  Bruschetta can also be served as a snack.

In some countries, grilled bread topped with chopped tomato, olive oil and herbs is popularly marketed under the bruschetta name.

Bruschetta is very easy to prepare.  You can make it in just 5 minutes and enjoy it any time of  year. You don’t need to cook anything, just toast bread!  But you must use fresh ingredients to make your  Bruschetta perfect.  I like spicy food, so to give my Bruschetta a bit zip I add Bell Pepper and Chili Pepper.  You can use Jalapeno or Habanero pepper or any type of hot pepper you have on hand.

Here’s my version of Bruschetta with a Filipino twist! I’m sure you really like this version.

 

Ingredients:

½ Loaf Sandwich Bread

5-6   Ripe tomatoes

5-6   Red Bell Pepper

¼ cup  Olive Oil

¼ tbsp.  Ground black pepper

2 cloves  Garlic

1   Chili Pepper  or  1 tsp. Chili powder

Salt to taste

1/2 cup Velveta or Cheez Whiz (or other meltable cheese)

 

Directions:

Bruschetta

Cut off crust all the way around each slice of bread.  Cut the crustless squares in to 4 quarters – 4 smaller squares.

Place bread on a baking sheet and toast in the oven on the low broil setting for about 1-2 minutess or until the bread turns brown, set aside.[spacer height=”20px” id=”2″]

 

morWash the chili pepper, garlic, tomatoes and red peppers.

Chop veggies into  small pieces.  Mix well.

Take  ½  of the veggie mixture and crush well with a  mortar and pestle, set the remaining chopped mixture aside.

Add the olive oil, chili pepper, ground black pepper, and salt to taste to the  crushed mixture. Crush it again until all ingredients are mixed well.

Spoon the crushed mixture on top of each piece of toasted bread, divide the mixture evenly over all bread pieces.

Heap spoonfuls of the chopped veggie mixture on each piece of bread.

Melt cheese and drizzle over the chopped veggie mixture.

Serve and Enjoy!!!
