Basic BBQ Chicken Rub

Who doesn’t love the sweet tangy taste of Barbecued Chicken? But have you ever wondered how those BBQ joints (as my NYC cousin calls them) make such delicious chicken?  I used to think it was all in the sauce which they slather on quite generously.  But oh how wrong I was!  I tried slathering different brands of barbecue sauces on my grilling chicken; all I got was burned sauce dripping off tasteless chicken!  Restaurant worthy finger licking good barbecued chicken requires 2 things:  BBQ Chicken Rub and really good barbecue sauce.

So really it all begins with a basic BBQ Chicken Rub; by the way in case you were wondering barbecued brisket, ribs, and other meats require a rub too; but I use a slightly different version with different spices.  I generally make a large batch of BBQ Chicken Rub, meaning a batch large enough to fill the 8 oz. mason jar I store it in.  This way I always have some handy, at least that’s the plan, whenever we feel like making barbecued chicken.

You will use about 1/4 of the jar each time you want to grill about 8-9 pieces of chicken.  I know it sounds like a lot, but trust me use the correct amount for some amazing chicken.  To use it you will need to drizzle 2 Tbs. of Olive Oil on the chicken ( I use boneless skinless chicken thighs, but you can use whatever parts you want although it’s best to at least remove the skin before seasoning.)  Then massage the BBQ Chicken Rub on each piece of chicken, be sure you get all sides.  Place the chicken in ziplock bag and allow to rest in the refrigerator for at least 30 minutes.  Or better still leave it in the fridge overnight or up to 24 hours.  Remember the longer it rests the more flavoring it will absorb.

If you’ve had the chicken marinating in the fridge for longer than 30 minutes let it rest on the counter for 30 minutes to bring it to room temperature.  Then grill* the chicken until just about 2 minutes before it’s full cooked then brush on barbecue sauce (homemade or your favorite brand) and cook for 1 minute, flip over, brush more sauce on and cook for another minute or until cooked.*  Read Tips on how to Grill Barbecued Chicken below.

Here’s my recipe for Basic BBQ Chicken Rub.  You can also use it on Turkey and other poultry you want to grill.

Ingredients:

3 Tbs. Paprika

3 Tbs.  Ground Sea Salt

2 1/2 Tbs. Chili Powder

2 1/2 Tbs. Onion Powder

3 Tbs. Garlic Powder

2 1/2 Tbs. Dark Brown Sugar

2 Tsp. Chipotle Chili Powder

2 Tsp. Ground Thyme

2 Tsp.  Ground Black Pepper

Directions:

Combine all ingredients in a small bowl and mix thoroughly.

Transfer to 8 Oz. Mason Jar and store tightly covered in a dry place.

You can store it in the pantry for about 3 months.  Store in the freezer if you want to keep it fresh longer.

* Tips for Grilling Barbecued Chicken

Spray grill with oil and preheat to high heat

Place chicken on the hot grill and cook uncovered for 5 minutes

Flip chicken over and cook another 5 minutes

Cover the grill and turn heat to low to maintain a temperature of about 325º with lid closed

Cook 5 minutes then flip chicken over and cook another 5 minutes with closed lid

Uncover the chicken and baste with barbecue sauce (homemade or your favorite brand)

Cook uncovered for 1 minute then flip chicken over and baste again

Cook uncovered another minute or until chicken temperature registers 165-180º when you insert a thermometer into the thickest part of the chicken (don’t touch the bone)

If chicken is still undone continue to grill with lid down until it reaches the correct temperature.  If you are doing this baste the chicken with barbecue sauce every 3 minutes until done.

Remove cooked chicken from grill and place in a pot.

Baste with more barbecue sauce and cover pot.

Let rest for 5 minutes before serving.  You can serve with a side of barbecue sauce.

This rub will store tightly covered in the pantry for about 3 months.  If you want to store it longer place it in the freezer where it can be stored for 6 months.

Mushroom & Cheese Stuffed Chicken Breasts In Creamy Sauce

stuffed chicken breastsAre you searching for that perfect dish to impress your guests with this summer?  I know you want something that looks impressive but is fairly simple to make.  You just want them to think you spent hours slaving away  in the kitchen; but you really just want to pop something in the oven while you snuggle up to a good book.  Well I’ve go the perfect dish for you!  °

Well perhaps super easy is a bit of a stretch.  You do have to put some effort into making stuffed chicken breasts, but not a whole lot, really I mean it.  You probably have most of the ingredients in your kitchen already.  With just a little bit of prep time (before popping everything in the oven) and a few minutes to make the sauce you will have time to sit down and read a book or take a short nap while it’s cooking.

You can serve this dish with a side of pasta for a very satisfying meal.  Add a tossed salad and you’ve got a great meal to serve to friends and family!  Seriously your main ingredients are garlic, mushrooms, cheese, and chicken what’s not to love?

  1. Preheat oven to 400 degree F
  2. Melt Butter in oven safe skillet
  3. Add garlic and saute about a minute. Add sliced mushrooms, parsley, salt and pepper. Saute until mushrooms are soft.
  4. Set mushrooms aside and allow to cool while you prep chicken breasts
  5. Wash breasts and pat dry with paper towel
  6. Rub onion powder, salt, and pepper on each breast
  7. Horizontally slice each breast at its thickest part. Do not slice through. Leave it attached to form a pocket.
  8. Place 2 slices of mozzarella cheese in each pocket
  9. Fill each breast with the sauted mushrooms and seal each breast with a couple of toothpicks.
  10. Remove any extra mushrooms from the pan. Leave any juices in the pan.
  11. Heat this pan and the juices and add the stuffed chicken breasts.
  12. Sear both sides of the breasts until they are golden brown.
  13. Cover pan and place in preheated oven for 20 minutes or until chicken is cooked through
  14. Remove from oven and place chicken breasts on a serving dish to keep warm while you make the sauce
Creamy Sauce
  1. Heat pan with chicken juices on stove
  2. Saute the garlic until fragrant
  3. Add Half & Half
  4. Bring to a simmer and add grated parmesan cheese and any remaining mushrooms
  5. Simmer until cheese has melted
  6. Slowly stir in dissolved corn starch to thicken
  7. Salt and pepper to taste
  8. Add parsley
  9. Either add chicken back into this pan or pour sauce over chicken to serve
  10. Serve with a side of your choice of pasta

Cheeseburger Sliders – Super Easy!

Cheeseburger SlidersI love cheeseburgers!  It’s one of my all time favorite foods and I am always in search of the best burger joints.

Lately “gourmet burgers” seem to be all the rage.  Lots of new burger joints are popping up around the country each one with their own specialty burger like Cajun Burgers, Hawaiian Burgers, Avocado Burgers, and so on.  And of course these gourmet burgers come in all different sizes from 6 to 8 ounces and more.  Then there’s the “make your own” burger where you’re invited to order your burger with everything from an assortment of cheeses and sauces to toppings of bacon, pineapple, avocados, and more.

That’s all good and well, but what happened to the simple good old fashioned Cheeseburger?  That perfectly grilled beef patty, reasonably sized of course, topped with good old American cheese, on a toasted hamburger bun possible topped with lettuce and tomato.  Sometimes I crave just that, a simple cheeseburger.  Honestly most of the time I end up making my own patties and grilling them in the backyard.

But sometimes I don’t want to fire up the grill and at times I can’t eat a full size burger.  That’s why I decided to make these sliders.  These Cheeseburger Sliders are so easy to make, the kids can do it with some supervision of course.

They’re great for dinner, as an appetizer, or as a snack.  You can even freeze them or store leftovers in the fridge, just pop them in the microwave and they’re good to go.  They would make a great addition to a tasting party too, they’re sized just right!


Cheese of the Month Club

Here’s the recipe!

Ingredients:

1 Pound Ground Beef

1 Tsp. Garlic Powder

1 Tsp. Onion Powder

1/2 Tsp. Sea Salt

1/2 Tsp. Ground Black Pepper

1 Package King’s Hawaiian Sweet Bread Rolls

6 Slices American Cheese

1/4 Cup Butter, Melted

1 Tsp. Sesame Seeds

Directions:

Carefully remove the rolls from the package without separating them.

Cut the sheet of rolls horizontally in half.

Bake in 375 degree oven for 20 minutes.

Remove from oven and slice along the roll seams.  Serve hot with ketchup for dipping.

If you want to freeze them or refrigerate leftovers place them in freezer safe containers.  Microwave frozen sliders for 4-5 minutes.  Microwave refrigerated sliders for 2 minutes.
