Ever wonder how those barbecue joints make such delicious barbecued brisket and ribs? If you’re trying to make it at home by slathering your meat with barbecue sauce it’s not going to be the same. Yes sauce matters, but the secret’s in the rub; the BBQ beef rub!
Of course you can buy all sorts of meat rubs from the supermarket, some are even pretty good. But if you want something outstanding nothing beats homemade. Oh and if you you’ve been rubbing dry spices on your meats try this little trick. Stir 2 tablespoons of rub into a tablespoon of olive oil then rub it on your meat. It makes a world of difference!
With summer in full swing it’s time to step up your grilling with this yummy BBQ Beef Rub! Use it on brisket, ribs, or even steaks!
Couple more tips before I give you my BBQ Beef Rub recipe.
Rub the olive oil mixture onto your meat and let it rest in the fridge for at least 2 hours.
Remove seasoned meat from fridge and let it sit on the counter for 30 minutes before grilling this brings meat temperature down to room temperature.
Grill covered until it almost reaches desired “doneness” then brush on BBQ Sauce. Grill until it’s almost to your desired doneness and place in covered pot. You see even if you remove the meat from the grill or oven the meat continues to cook for about 5 minutes. That’s why you want to remove the meat from the grill BEFORE it reaches the doneness you want. If you don’t remove the meat until it reaches the doneness you want you end up with over cooked dry meat.
Let meat rest in pot for 5 minutes before serving. The resting period seals in the juices and allows the meat to reach the desired doneness.

I’m pretty sure I’ve mentioned that my husband has embarked on a Keto Diet plan which pretty much means I either make something Keto friendly just for him or find keto friendly recipes for the whole family to enjoy. Since I’m not particularly fond of playing short order cook it is so much easier to make something that we can all have for dinner. And so I’ve come up with this Keto friendly Butter Steak Cubes.
Butter Steak Cubes are real easy to make and they are really delish! Everyone loves them! I serve them with a tossed salad for hubby and sides like mashed potatoes, corn, and veggies for the rest of us. My husband likes them so much I sometimes double the recipe so he can have leftovers for the next couple of days.
One thing though, if you want leftovers for lunch or whatever don’t over cook the steak. In fact I usually cook them just until they turn slightly pink in the middle. That way they can be reheated later. If you over cook the meat they end up like jerky when reheated. You definitely don’t want that!
4 NY Strip Steaks cut into 1″ cubes
1/2 Tbs. Cayenne Red Pepper
1 Tbs. Garlic Powder
1 Tbs. Onion Powder
1 Tsp. Sea Salt
1 Tsp. Ground Black Pepper
1/2 Tbs. Lemon Pepper
1 Tsp. Oregano
1 Stick Butter
3 Tbs. Olive Oil
1/4 Cup Fresh Parley Chopped
Combine Spices in a small bowl and mix well
Melt Butter in Olive Oil over med high heat
Add cubed meat and sprinkle spices over it
Toss meat in frying pan and cook until it almost reaches your desired “doneness”
Who doesn’t love the sweet tangy taste of Barbecued Chicken? But have you ever wondered how those BBQ joints (as my NYC cousin calls them) make such delicious chicken? I used to think it was all in the sauce which they slather on quite generously. But oh how wrong I was! I tried slathering different brands of barbecue sauces on my grilling chicken; all I got was burned sauce dripping off tasteless chicken! Restaurant worthy finger licking good barbecued chicken requires 2 things: BBQ Chicken Rub and really good barbecue sauce.
So really it all begins with a basic BBQ Chicken Rub; by the way in case you were wondering barbecued brisket, ribs, and other meats require a rub too; but I use a slightly different version with different spices. I generally make a large batch of BBQ Chicken Rub, meaning a batch large enough to fill the 8 oz. mason jar I store it in. This way I always have some handy, at least that’s the plan, whenever we feel like making barbecued chicken.
You will use about 1/4 of the jar each time you want to grill about 8-9 pieces of chicken. I know it sounds like a lot, but trust me use the correct amount for some amazing chicken. To use it you will need to drizzle 2 Tbs. of Olive Oil on the chicken ( I use boneless skinless chicken thighs, but you can use whatever parts you want although it’s best to at least remove the skin before seasoning.) Then massage the BBQ Chicken Rub on each piece of chicken, be sure you get all sides. Place the chicken in ziplock bag and allow to rest in the refrigerator for at least 30 minutes. Or better still leave it in the fridge overnight or up to 24 hours. Remember the longer it rests the more flavoring it will absorb.
If you’ve had the chicken marinating in the fridge for longer than 30 minutes let it rest on the counter for 30 minutes to bring it to room temperature. Then grill* the chicken until just about 2 minutes before it’s full cooked then brush on barbecue sauce (homemade or your favorite brand) and cook for 1 minute, flip over, brush more sauce on and cook for another minute or until cooked.* Read Tips on how to Grill Barbecued Chicken below.

Well perhaps super easy is a bit of a stretch. You do have to put some effort into making stuffed chicken breasts, but not a whole lot, really I mean it. You probably have most of the ingredients in your kitchen already. With just a little bit of prep time (before popping everything in the oven) and a few minutes to make the sauce you will have time to sit down and read a book or take a short nap while it’s cooking.
You can serve this dish with a side of pasta for a very satisfying meal. Add a tossed salad and you’ve got a great meal to serve to friends and family! Seriously your main ingredients are garlic, mushrooms, cheese, and chicken what’s not to love?
I love cheeseburgers! It’s one of my all time favorite foods and I am always in search of the best burger joints.
Lately “gourmet burgers” seem to be all the rage. Lots of new burger joints are popping up around the country each one with their own specialty burger like Cajun Burgers, Hawaiian Burgers, Avocado Burgers, and so on. And of course these gourmet burgers come in all different sizes from 6 to 8 ounces and more. Then there’s the “make your own” burger where you’re invited to order your burger with everything from an assortment of cheeses and sauces to toppings of bacon, pineapple, avocados, and more.
That’s all good and well, but what happened to the simple good old fashioned Cheeseburger? That perfectly grilled beef patty, reasonably sized of course, topped with good old American cheese, on a toasted hamburger bun possible topped with lettuce and tomato. Sometimes I crave just that, a simple cheeseburger. Honestly most of the time I end up making my own patties and grilling them in the backyard.
But sometimes I don’t want to fire up the grill and at times I can’t eat a full size burger. That’s why I decided to make these sliders. These Cheeseburger Sliders are so easy to make, the kids can do it with some supervision of course.
They’re great for dinner, as an appetizer, or as a snack. You can even freeze them or store leftovers in the fridge, just pop them in the microwave and they’re good to go. They would make a great addition to a tasting party too, they’re sized just right!
Here’s the recipe!
1 Pound Ground Beef
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
1/2 Tsp. Sea Salt
1/2 Tsp. Ground Black Pepper
1 Package King’s Hawaiian Sweet Bread Rolls
6 Slices American Cheese
1/4 Cup Butter, Melted
1 Tsp. Sesame Seeds
Carefully remove the rolls from the package without separating them.
Cut the sheet of rolls horizontally in half.
Place the bottom half in a baking sheet.[spacer height=”20px” id=”2″]
Cook the ground beef with the spices in a skillet until crumbly.[spacer height=”20px” id=”2″]
Spread ground beef evenly on top of the rolls.[spacer height=”20px” id=”2″]
Place the cheese slices over the ground beef.[spacer height=”20px” id=”2″]
Place the top of the rolls over the cheese.[spacer height=”20px” id=”2″]
Mix the sesame seeds with the melted butter and brush on top of the rolls.[spacer height=”20px” id=”2″]
Bake in 375 degree oven for 20 minutes.
Remove from oven and slice along the roll seams. Serve hot with ketchup for dipping.
If you want to freeze them or refrigerate leftovers place them in freezer safe containers. Microwave frozen sliders for 4-5 minutes. Microwave refrigerated sliders for 2 minutes.
