Pastillas de Ube Recipe

Pastillas de Ube is a bite sized sweet chewy purple yam flavoured candy and is made from milk, purple yam and sugar. It is a perfect gift and dessert for picnics  and parties. This delightful piece of heaven is attributed to the province of Bulacan which is located in Philippines and which is still the pastillas making capital of the country.

Aside for its easy to prepare and to cook, this is a very yummy and a delightful treat to all of us specially our kids. This sweet chewy candy was sold everywhere in our country, you can see and taste different versions of it, but for now, this is my version of Pastillas de Ube Recipe. Enjoy!

 

Ingredients:

2 cups grated ube or boiled & mashed ube

1 can (300ml) sweetened condensed milk

½ cup refined sugar

Materials Needed:

Colored Paper “Papel de Hapon”, for wrapping or use paper liners & clear cellophane.

 

Directions:

Clean, peel and slice the ube then put it in a large casserole with enough water to cover the ube.

Boil ube over medium heat until tender and strain, cool down before mashing.

In a non-stick pan, combine ube and sweetened condensed milk and mix well.

Cook over low heat and stir constantly to avoid mixture from burning.

Constantly mix the ube until thick and smooth. “When your ube mixture doesn’t stick to the pan and starts to form soft dough it’s done and remove it directly from the fire.

Transfer the ube pastillas in a greased pan and flatten the entire mixture using a greased spatula or any similar utensil.

Set aside and let it cool down completely before cutting into small bite-size pieces.

Slice ube pastillas according to your size preference using a greased knife.

Roll Ube pastillas lightly with sugar and shake off the extras.

Repeat procedure until done then set aside.

You can now wrap on prepared pastillas wrappers.

Recipe Notes

You can used powdered ube for easy and convenient cooking.

Always used non-stick pan to avoid burning and sticking.

Store in an airtight container at room temperature.

For a sweeter and smoother version use ube halaya and add 1 cup powdered milk for extra creaminess.

Macapuno Balls Recipe

It is called “Kopyor” in Indonesia and called Macapuno in Philippines. It is a coconut sport or naturally occurring coconut mutant which has an abnormal development of the endosperm. As a result, it is a soft jelly-like coconut flesh. Unlike a coconut fruit, Macapuno does not contain water inside but instead it is completely filled with thick and curdled white meat.

Macapuno meat is famous and widely used for making popular and world class sweets like macapuno ice cream, macapuno candy and macapuno preserves. Today, This is my version of Macapuno Balss Recipe. Enjoy!

 

Ingredients:

2 cups macapuno “mutant coconuts”, preserves

3 – 4 cans (300 ml) condensed milk

1 cup cornstarch

1/4 cup water

 

Directions:

In a pan over low heat, combine macapuno preserves and condensed milk.

Halfway, remove from heat and add the cornstarch which is “dissolved in a little water”

Blend well and continue cooking while stirring constantly.

Continue until it thickens till mixture separates from pan.

Let it cool and form little balls until all was form and get a plastic candy wrapper, wrap the Macapuno Balls.

Yema Filipino Recipe!!!

Yema is a very gooey and soft custard candy that was created by Filipino’s during the time of Spanish colonization. It comes from the word yolk in Spanish. Originating from the province of many sweets, Bulacan. It comes in different forms and shapes then covered in sugar. It is usually wrapped in colorful cellophane or skewered in toothpicks.

This chewy treat is served bite-sized and is a finger food. We Filipinos love to eat it after our meals, as a snack or anytime you have a craving for anything sweet. Today I will give you my version of Yema Filipino Recipe! Enjoy!

 

Ingredients:

12 pcs. egg yolks

1/2 cup granulated sugar, for coating

1 can condensed milk-410 ml

1 roll plastic food wrapper

 

Directions:

In a non-stick saucepan, combine the egg yolks and condensed milk then stir continuously over low heat for about 30 minutes or until firm.

Transfer to a plate and let it cool before forming into balls.

Scoop out about 1 tablespoon of the mixture and shape into a small ball until all is in circle shapes.

Place sugar in a bowl and roll the yemas balls to coat them.

Place each candy in the middle of squared plastic food wrapper.

Gather all four corners and twist together to secure then alternatively, place coated balls into an airtight container.

Refrigerate for an hour or so,

Easy Holiday Bark Recipe

Are you still looking for a quick and easy holiday treat to make for family and friends?  Or maybe to give as gifts to friends and neighbors?  This Easy Holiday Bark recipe is the one for you!

Really!  This Easy Holiday Bark is just that EASY!  It needs just 2 basic ingredients and whatever toppings you have in the pantry.  It’s a great holiday kitchen craft for the kids to make, it’s that easy!  All you need is a microwave and aluminum foil.

And trust me your family and friends will love it!  This Easy Holiday Bark also makes a great neighbor gift, just pack it in clear ziplock bags, add a ribbon, and voilà!  You’ve got a tasty gift!

I made 2 different types of Easy Holiday Bark; peppermint and pretzel bark.  You can literally top it with anything you want, like maybe crushed potato chips!  Yes I said potato chips!  Have you ever had chocolate covered potato chips?  It’s salty and sweet, and oh so yummy!

So here’s the basic recipe!  The toppings are up to you![spacer height=”20px” id=”2″]

Ingredients:

3 Cups Semi-Sweet chocolate chips

2 Tbls.  Shortening

Toppings:  crushed candy canes, pretzels, nuts, M&M’s, Sprinkles, Potato Chips, etc.

Procedure:

Line a baking sheet with aluminum foil

Place chocolate chips in a microwaveable bowl.

Microwave on 50% or defrost setting in 1 minute increments about 3 times.  Stir between increments.  Do this until the chocolate is fully melted and smooth.  If chocolate hasn’t melted yet microwave in 30 second increments until it does.

Stir in shortening and stir until the mixture is smooth.

Spread melted chocolate onto foil to form a layer about 1/2″ thick.

Top with desired toppings.  I used crushed candy cane for my Peppermint Bark and Mini Pretzels and Christmas Sprinkles for my Pretzel Bark.

Place in refrigerator for about 60 – 90 minutes or until the chocolate has solidified.

Break off pieces and enjoy!

Homemade Lollipops for Christmas

Homemade Lollipops for Christmas

Are you looking for a cheap and easy treat for the holidays?  Well look no further!  These Homemade Lollipops will do the trick!

Homemade lollipops are super cheap and super easy to make. It requires just 2 basic ingredients! (3 if  you want to add flavoring). And sprinkles! More than likely you’ll have everything you need in your pantry, sugar and corn syrup.

Years ago I made  lollipops using metal molds that resembled cookie cutters with a hole for the stick on the bottom.  I don’t know whatever happened to those molds, but I sure don’t miss them.

These days I use silicone molds for my homemade lollipops.  They came in many shapes and sizes and are so much easier to use.

homemade lollipopsFor these homemade lollipops I used a basic round mold I had gotten from Amazon. (affiliate link)  But you can use whatever you have at home.

Don’t have lollipop molds?  No worries you can homemade lollipops can be made without molds.  Just line a baking sheet with aluminum foil and pour out circles of the syrup on to it.  Space them about 1″ apart so the circles don’t run into each other.  The quickly press a lollipop stick into each circle, work quickly because it hardens fast.

An alternative would be to poke small holes on the bottom of a plastic or metal cookie cutter, make the hole just large enough for the lollipop stick.  Insert the stick in the hole an place it on a foil covered baking sheet.  You’ll have to do this to a few cookie cutters.  The you just pour the syrup into each cookie cutter.  This way would be way too much work for me, but it will work if you don’t mind poking holes into your cookie cutters.

These homemade lollipops make great party treats or you can even gift charms, just tie one on to the top of a wrapped gift.  You don’t have make them just for Christmas, you can tailor the sprinkles or the shape to fit any holiday or occasion!

So I made these using Christmas sprinkles I had in the pantry.  I have plenty of sprinkles, I sort of went overboard on the sprinkles this year.  I found them displayed at Walmart and couldn’t make up my mind which to buy, so I bought one of each.  I will have holiday sprinkles for many Christmases to come!

I ended up with extra syrup so I poured it into silicone ice cube trays and made these hard candies as well.  They made great coffee or tea sweetener!  Just drop one into a cup of coffee or glass of iced tea, it looks pretty while it sweetens the drink!

My grandson, Jett, who is a lollipop monster loves them!  So here’s the recipe!

Homemade Lollipops

Ingredients:

2 Cups Sugar

2/3 Cup Light Corn Syrup

2 Tsp.  Clear Flavoring (optional – if you do use flavoring be sure you use the clear extracts so it doesn’t change the color.  You can find clear flavor extracts at the cake/candy making aisle of Walmart or most craft stores.)

Sprinkles

Lollipop sticks

Procedure:

Get a large bowl of ice water ready and set aside.

Combine sugar and syrup in a medium saucepan and place on stove over medium – high heat.

If you have one clip a thermometer to the side of the pan.  If you don’t, it’s ok I’ll tell you how to determine the hard crack stage of the candy in a bit.

Stir sugar and syrup until the sugar dissolves and the mixture boils.

Let mixture boil until it reaches 310º, the hard crack stage.  Stir the mixture as it boils, scraping the sides to keep sugar crystals from forming on the sides of the  pan.  This takes about 9-10 minutes.  If you don’t have a thermometer you can determine if your syrup has reached the hard crack stage by dropping a 1/2 teaspoon or so of your hot mixture into a cup of cold water.  The syrup should solidify and harden in the water.  Test the solid candy in the water, it should be hard and snap or crack in your fingers.  If it doesn’t boil the mixture another minute or two or and test again.

Remove syrup from heat and immediately place in the ice bath you made earlier.  Gently swirl the pan in the water being careful not to get water in the pan.  If you are adding flavor swirl the flavor into the syrup now.  Swirl for about 10 seconds.

Working quickly pour the syrup into the molds or on to the foil covered cookie sheet.

Gently press a stick into each round and press sprinkles on top.

Let candy sit on counter until it hardens and cools.  About 10 – 15 minutes.

Pop lollipops out of molds and you’re done.

You can wrap each lollipop in small treat bags for gift giving.
